Fabio Trabocchi Restaurants is seeking a skilled, disciplined, and passionate Sushi Chef to join our acclaimed culinary team.

Essential Duties & Responsibilities

Execute Exceptional Sushi & Raw Preparations

  • Prepare nigiri, sashimi, maki, hand rolls, crudo, tartare, and specialty raw bar dishes with precision and consistency
  • Fabricate and portion seafood according to restaurant specifications
  • Maintain beautiful presentation and plate execution during service
  • Ensure proper rice preparation, seasoning, fish handling, and ingredient freshness at all times

Maintain Culinary Excellence

  • Uphold all Fabio Trabocchi Restaurants recipes, standards, and presentation guidelines
  • Follow detailed prep lists, production schedules, and station organization
  • Monitor quality of all fish, seafood, garnishes, sauces, and supporting ingredients
  • Maintain consistency in taste, texture, temperature, and visual appeal

Support Kitchen Operations

  • Work closely with Executive Chef, Sous Chefs, and line cooks to ensure seamless service flow
  • Assist with inventory awareness, product rotation, and waste control
  • Ensure station is fully stocked, organized, and service-ready at all times
  • Contribute to a collaborative and disciplined kitchen environment

Maintain Sanitation & Food Safety Standards

  • Follow all DOH food handling, storage, labeling, and sanitation procedures
  • Maintain a clean, organized, and safe sushi station throughout the shift
  • Ensure all seafood products are handled and stored according to strict freshness standards

Lead Through Professionalism

  • Demonstrate urgency, discipline, consistency, and accountability
  • Support fellow kitchen team members and contribute positively to service
  • Take ownership of your station and pride in every dish leaving the kitchen

Benefits include:

  • Fabio Trabocchi Restaurants offers full-time employees company-subsidized health insurance. A full-time employee must work an average of 30 hours per week to qualify for health insurance benefits. Coverage begins on the first day of the month following the employee’s 60th day of employment. The insurance enrollment period is between 30 and 90 days of employment.

Qualifications

  • 2+ years of sushi chef experience in upscale, fine dining, omakase, or high-volume Japanese restaurants preferred
  • Strong fish fabrication and knife skills
  • Deep understanding of sushi rice, seafood quality, and raw preparation techniques
  • Ability to work cleanly, quickly, and efficiently under pressure
  • Commitment to consistency, sanitation, and culinary excellence
  • Team-oriented mindset with strong communication skills
  • Flexible schedule including evenings, weekends, and holidays
